Braised Mushrooms

The traditional Simple Faire menu of BBM involves stuffed mushrooms, so I wanted to include mushrooms in some fashion. These are after a recipe in Two Fifteenth Century Cookbooks.

10lbs mushrooms
1 c diced garlic
1 bottle red wine
16 cups veg broth

Slice mushrooms. In non-reactive bowl, marinate in garlic, wine, and broth for at least 2 hrs. Put in a non-reactive pot, bring up to a simmer & hold there for 30 min.
