Roasted Root Veg

This is one of those ‘plausible’ side dishes that is probably too simple to have a recipe.

5 lb carrots
5 lb beets
5 bulbs of fennel
1 c olive oil
some thyme
some salt

Preheat oven to 425. Chop veg into approx 1″ cubes. Toss with olive oil, salt, and thyme. Lay out on a sheet pan, and put into oven for 10-15 min, until the edges start browning and the carrots are soft.
