Current/Raisin Fruitcake

This is one of the few totally not period recipes for this feast. But I think that every Christmas season needs fruitcake, and it should be a good one at that, not involving commercial candied stuff. Jo Walton wrote this one up. http://papersky.livejournal.com/208326.html

Current/raisin fruit cake (cousin beryl’s fruitcake, from Jo Walton)
1 c flour
1/2 c sugar
2 1/2 c dried fruit of choice
1/2 c oil
1/2 c half n half or cream
2 eggs

Preheat oven to 325. Mix dry ingredients, including fruit, until all the fruit is flowered and all the flour has fruit. Mix together wet ingredients, well. Fold into dry until mixed. Line a 7″ cake tin or a 8″ bread pan with parchment paper. Seriously. Pour glop into pan, bake for approx 90 min. It will be “oh, god, that smells so good, must be done!” or a toothpick comes out clean. Your choice.
