Aoili

I like a good Spanish Aoili, no egg needed. It’s all about the garlic, and while I’ve not got hard evidence for this in period, I’ve got some circumstantial evidence, esp if you involve breadcumbs as a thickener. That got nixed because I wanted a gluten-free sauce, and this falls under “traditional”.

Aoili
10 cloves garlic
1t salt
3/4 c olive oil

add garlic and salt to food processor – start. Slowly pour in olive oil until it becomes the consistency of mayo.
