Spinach Pasties

Other than the bread, this was the only other gluten containing object. Traditional Simple Faire has Spinach Fibanocci. I much prefer the original “Honey, don’t forget your lunch!” of pasties.

96 oz of spinach
6 lbs feta, crumbled
5 lb ricotta
¼ c salt
½ c lemon juice
½ c fresh dill or 4 T dried dill
100 puff pastry squares
Mix spinach, feta, salt, and garlic. Place 2T in the middle of a puff pastry square, fold diagonally, seal, bake 20 min at 400.
