Hedgehogs (Pangolin!)

The consensus in the kitchen was that with the sliced almonds rather than slivered almonds, they looked more like baby pangolin.

1 pounds ground beef
2 tablespoons bread crumbs
½ teaspoon ginger
½ teaspoon mace
2 teaspoons salt
¼ teaspoon pepper
2 tablespoons sugar
1 tablespoon softened butter
2 egg yolks
4 tablespoons butter
4 tablespoons water
2 ounces slivered almonds
Mix the ground beef, breadcrumbs, spices, seasonings, and softened butter. Bind with the beaten egg yolks and form one inch balls.  Place in a buttered pan. Cook covered at 350 for 45 min basting at intervals with the rest of the butter melted in the water.  Stick the slivered almonds all over the pudding, so that they look like the quills of a hedgehog or sea urchin.
