Take 4 pounds of pork and 4 pounds of beef and chop it fine. Then add 2 pounds of bacon, and chop it together, and add 3 cups water, then also mix salt and pepper, however it pleases it you, or if you have herbs, you can mix sage and marjoram, so you have good bratwurst.

4 lbs pork butt
4 lbs stew beef
2 lbs bacon or pork belly
3 cups water
2 t sage
2 t marjoram
1/2 c  salt
1 T black pepper

Grind pork, beef, and bacon, mix with water, salt, pepper, sage, marjoram, stuff into sausage casings. Parboil, and finish in the oven or in a pan.
