Coquinaria has apples stuffed with salt pork and spices. One of the conditions of the bid was adding more bacon, the modern equivalent to salt pork. These are uncountably tasty.
Apples filled with good thynges
8 small apples
1/2 lb uncooked bacon
1 c chopped walnuts
3 t cinnamon
1/2 t nutmeg
1 T honey
halve longwise apples & core. Mix finely chopped bacon/walnuts/2 t cinnamon, stuff in apples, drizzle with honey, sprinkle with salt, nutmeg, 1 t cinnamon, bake 40 min at 350.
