Venison Meatballs

This is the only recipe from the feast that doesn’t come from Sabina Welserin. It comes from the Intalkochbuch. I used someone else’s translation, because Tirolian German is no fun.

Auf ein f¸rst essen VIII aier. Slach dy ein vnd gew¸rtz darczu vnd chlain gehakten spek vnd in die prue petersil oder saluay.

For a princely dish, 8 eggs. Break them into it, add spices and chopped bacon. Parsley or sage go into the broth.

15 lb ground venison
5 lb finely chopped pork belly
1/2c powder fort
12 eggs
6 c Beef broth
Herbs

Start beef broth in roasting pan on high, with herbs. Mix meat, spices, and eggs. Roll into golf ball sized balls, bake in 350 oven for 10 min, then put into the broth, set to medium, let cook at least 1 hr.
